Ingredients
  

  • 1 cup dragon fruit cubed
  • 1 cup pineapple chunks
  • 0.75 cup coconut milk
  • 2 tbsp honey or maple syrup to taste
  • 1 tbsp lime juice fresh
  • 1 cup ice cubes

  • Mixing bowls
  • Clear glasses
  • Spoon or skewer

Method
 

  1. Blend dragon fruit with half the coconut milk, honey, and lime juice until smooth.
  2. Transfer mixture to a bowl and rinse blender.
  3. Blend pineapple with remaining coconut milk, honey, lime juice, and ice.
  4. Layer dragon fruit and pineapple mixtures into glasses.
  5. Gently swirl layers using a spoon or skewer.
  6. Serve immediately or chill briefly before serving.

Notes

Use frozen fruit for a thicker texture or freeze into popsicles.
