Method
- Combine mashed bananas, sugars, lime juice, cinnamon, and salt in a saucepan.
- Cook over medium heat until bubbling, stirring frequently.
- Reduce heat and simmer until thickened and caramelized, about 10–12 minutes.
- Stir in rum and vanilla, simmer 2–3 minutes.
- Add pectin, bring to gentle boil, and cook 1–2 minutes.
- Test thickness, then pour into sterilized jars and seal.
Notes
Adjust rum to taste. Store refrigerated up to 3 weeks or process for shelf storage.
