Ingredients
  

Jam Base
  • 4 ripe bananas mashed
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 3 tbsp lime juice fresh
  • 0.25 cup dark rum
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 1.5 tbsp powdered fruit pectin

Method
 

  1. Combine mashed bananas, sugars, lime juice, cinnamon, and salt in a saucepan.
  2. Cook over medium heat until bubbling, stirring frequently.
  3. Reduce heat and simmer until thickened and caramelized, about 10–12 minutes.
  4. Stir in rum and vanilla, simmer 2–3 minutes.
  5. Add pectin, bring to gentle boil, and cook 1–2 minutes.
  6. Test thickness, then pour into sterilized jars and seal.

Notes

Adjust rum to taste. Store refrigerated up to 3 weeks or process for shelf storage.
