Ingredients
  

  • 4 cod fillets skinless, boneless
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 tbsp fresh thyme
  • 1 lemon zest and juice
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper freshly ground

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and lightly oil a baking dish.
  2. Place cod fillets in the dish and season with salt and pepper.
  3. Scatter cherry tomatoes and garlic around the fish.
  4. Drizzle with olive oil and sprinkle with thyme.
  5. Add lemon zest and juice over the top.
  6. Bake for 15–18 minutes until cod flakes easily and tomatoes burst.
  7. Spoon juices over fish and serve warm.

Notes

Do not overcook the cod to keep it moist and flaky.
