Ingredients
  

Cookie Batter
  • 4 large roasted beets, sliced
  • 10 oz goat cheese softened
  • 2 tbsp heavy cream or Greek yogurt
  • 1 tbsp fresh thyme chopped
  • 1 tsp lemon zest
  • 0.25 tsp salt
  • 0.25 tsp black pepper
Filling
  • 2 tbsp olive oil for drizzling
  • 1 tbsp balsamic vinegar optional

Method
 

  1. Roast beets until tender, peel, and slice into thin rounds.
  2. Mix goat cheese with cream, thyme, lemon zest, salt, and pepper until smooth.
  3. Line a loaf pan with plastic wrap and lightly oil it.
  4. Layer beets and goat cheese mixture alternately until the mold is full.
  5. Chill for at least 6 hours or overnight.
  6. Unmold, slice with a sharp knife, and serve with herbs or nuts.

Notes

For the cleanest slices, warm the knife before cutting.
