Ingredients
  

Cookie Batter
  • 6 cups mixed greens spring mix, arugula, or spinach
  • 2 oranges peeled and segmented
  • 1 grapefruit optional, segmented
  • 1 cup pomegranate arils
  • 0.5 cup feta cheese crumbled
  • 0.5 cup candied pecans or walnuts
  • 1 small red onion thinly sliced
Filling
  • 0.33 cup olive oil extra virgin
  • 3 tbsp orange juice fresh
  • 1 tbsp lemon juice
  • 1 tbsp vinegar red wine or cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

  1. Segment the citrus and prepare the pomegranate arils.
  2. Arrange mixed greens in a large bowl or platter.
  3. Top with citrus segments, pomegranate, and red onion.
  4. Sprinkle with feta and candied nuts.
  5. Whisk together olive oil, citrus juices, vinegar, honey, mustard, salt, and pepper.
  6. Drizzle dressing over salad just before serving.

Notes

Assemble just before serving for the freshest texture.
