- Preheat the oven to 350°F (175°C). Grease a 9×13 baking dish.
- In a large bowl, combine sour cream, melted butter, eggs, whole kernel corn, and creamed corn.
- Add the Jiffy corn muffin mix and stir until just combined.
- Fold in shredded cheddar cheese if using.
- Pour the mixture into the prepared dish and smooth the top.
- Bake for 45–55 minutes until golden on top and the center is set.
- Rest for 5–10 minutes before serving warm.
Notes
For a creamier texture, increase sour cream to 1 1/4 cups. Add jalapeños or cheese for flavor variations.
