Easy Cranberry Orange Chicken

Ingredients
  

Chicken
  • 4 boneless chicken breasts pounded to even thickness
  • 1 tbsp olive oil
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Cranberry Orange Sauce
  • 1 cup fresh or frozen cranberries
  • 0.75 cup orange juice fresh
  • 1 tsp orange zest freshly grated
  • 0.5 cup chicken broth
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 2 cloves garlic minced
  • 0.25 tsp cinnamon optional
  • 1 tbsp cornstarch mixed with 1 tbsp water

Method
 

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken until golden on both sides.
  2. Remove chicken and reduce heat. Add garlic to the skillet and sauté until fragrant.
  3. Add cranberries, orange juice, broth, honey, soy sauce, orange zest, and cinnamon. Stir and bring to a simmer.
  4. Simmer 10 minutes until cranberries burst and sauce thickens slightly.
  5. Stir in cornstarch slurry if thicker consistency is desired.
  6. Return chicken to the skillet and coat with sauce. Cook 5–8 minutes until chicken is cooked through.
  7. Serve warm with extra orange zest or herbs if desired.

Notes

Great for holiday dinners or meal prep. Sauce can be made ahead.
