Method
- Preheat oven to 325°F (163°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press crust mixture into each liner and flatten firmly.
- Beat softened cream cheese until smooth.
- Add sugar and mix until creamy.
- Mix in eggs one at a time on low speed.
- Add vanilla and sour cream and stir until just combined.
- Add green gel food coloring until bright green.
- Pour batter over crusts and bake 15–18 minutes until set.
- Cool for 30 minutes, then refrigerate at least 2 hours.
- Top with a red heart sprinkle before serving.
Notes
For an extra festive touch, top with whipped cream and crushed candy canes.
