Ingredients
  

Cookie Batter
  • 1 cup graham cracker crumbs
  • 3 tbsp granulated sugar
  • 4 tbsp unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs room temperature
  • 1 tbsp vanilla extract
  • 0.5 cup sour cream
  • 3-4 drops green gel food coloring
  • 12 red heart sprinkles for topping

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (163°C). Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press crust mixture into each liner and flatten firmly.
  4. Beat softened cream cheese until smooth.
  5. Add sugar and mix until creamy.
  6. Mix in eggs one at a time on low speed.
  7. Add vanilla and sour cream and stir until just combined.
  8. Add green gel food coloring until bright green.
  9. Pour batter over crusts and bake 15–18 minutes until set.
  10. Cool for 30 minutes, then refrigerate at least 2 hours.
  11. Top with a red heart sprinkle before serving.

Notes

For an extra festive touch, top with whipped cream and crushed candy canes.
