Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened, about 5–7 minutes.
- Stir in garlic and cook 30 seconds.
- Add ham and sauté 2–3 minutes.
- Pour in chicken broth and add beans, bay leaf, and thyme.
- Bring to a boil, reduce heat, and simmer 25–30 minutes.
- Season to taste with salt and pepper.
- Remove bay leaf and serve garnished with parsley.
Notes
For extra creaminess, mash a portion of the beans before simmering.
