Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.25 cups milk
  • 1 egg large
  • 3 tbsp butter melted
  • 1 tsp vanilla extract optional

Equipment

  • Mixing bowls
  • Whisk
  • Nonstick skillet or griddle
  • Spatula

Method
 

  1. Whisk together flour, sugar, baking powder, and salt in a bowl.
  2. In another bowl whisk milk, egg, melted butter, and vanilla.
  3. Pour wet mixture into dry ingredients and stir gently until just combined.
  4. Heat lightly greased skillet over medium heat.
  5. Pour 1/4 cup batter per pancake onto skillet.
  6. Cook until bubbles form, then flip and cook until golden.
  7. Repeat with remaining batter and serve warm.

Notes

Do not overmix batter. Let it rest 5 minutes for fluffier pancakes.
