Method
- Combine softened butter, peppermint extract, cream, salt, and half of the powdered sugar. Mix until smooth.
- Add remaining powdered sugar until a soft dough forms.
- Roll dough into small balls and flatten into discs. Place on parchment-lined baking sheet.
- Freeze patties for 20–25 minutes until firm.
- Melt chocolate and coconut oil together until smooth.
- Dip chilled peppermint discs into chocolate and place on parchment.
- Allow chocolate to fully set before serving or storing.
Notes
For stronger mint flavor, add an extra 1/4 teaspoon peppermint extract. Store chilled for best texture.
