Ingredients
  

Peppermint Filling
  • 2 cups powdered sugar
  • 2 tbsp unsalted butter softened
  • 2 tbsp heavy cream or milk
  • 1-1.5 tsp peppermint extract
  • 1 pinch salt
Chocolate Coating
  • 1.5 cups dark or semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Combine softened butter, peppermint extract, cream, salt, and half of the powdered sugar. Mix until smooth.
  2. Add remaining powdered sugar until a soft dough forms.
  3. Roll dough into small balls and flatten into discs. Place on parchment-lined baking sheet.
  4. Freeze patties for 20–25 minutes until firm.
  5. Melt chocolate and coconut oil together until smooth.
  6. Dip chilled peppermint discs into chocolate and place on parchment.
  7. Allow chocolate to fully set before serving or storing.

Notes

For stronger mint flavor, add an extra 1/4 teaspoon peppermint extract. Store chilled for best texture.
