Method
- Line a baking sheet with parchment paper.
- Melt butter and chocolate together over low heat until smooth.
- Remove from heat and stir in vanilla extract.
- Allow chocolate to cool slightly, then fold in marshmallows.
- Mix coconut and powdered sugar in a shallow bowl.
- Roll chocolate mixture in coconut mixture to form a log.
- Wrap tightly and refrigerate until firm.
- Slice and serve chilled.

For best results, chill completely before slicing.
