Ingredients
  

Cookie Base
  • 2 cups semi-sweet chocolate chips
  • 0.5 cup unsalted butter
  • 1 tsp vanilla extract
  • 3 cups mini rainbow marshmallows
Coating
  • 1 cup sweetened shredded coconut
  • 0.5 cup powdered sugar

Method
 

  1. Line a baking sheet with parchment paper.
  2. Melt butter and chocolate together over low heat until smooth.
  3. Remove from heat and stir in vanilla extract.
  4. Allow chocolate to cool slightly, then fold in marshmallows.
  5. Mix coconut and powdered sugar in a shallow bowl.
  6. Roll chocolate mixture in coconut mixture to form a log.
  7. Wrap tightly and refrigerate until firm.
  8. Slice and serve chilled.

Notes

For best results, chill completely before slicing.
