Ingredients
  

Pavlova
  • 6 egg whites room temperature
  • 1.5 cups superfine sugar
  • 2 tsp cornstarch
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
Topping
  • 1.5 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries sliced
  • 0.5 cup raspberries
  • 0.5 cup blueberries

Equipment

Method
 

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Beat egg whites until soft peaks form, then gradually add sugar until stiff and glossy.
  3. Fold in cornstarch, vinegar, and vanilla extract.
  4. Spoon meringue into individual dollops forming a wreath shape.
  5. Bake for 75 minutes, then cool completely in the oven.
  6. Whip cream with powdered sugar and vanilla.
  7. Top pavlova with whipped cream and fresh berries before serving.

Notes

Assemble just before serving for best texture.
