Ingredients
  

Taco Filling
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 0.66 cup water
  • 0.5 cup diced onion
  • 1 clove garlic minced
Cupcake Base
  • 12 small flour tortillas
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup refried beans
Toppings
  • 0.5 cup diced tomatoes
  • 0.25 cup sliced black olives
  • 0.25 cup chopped cilantro
  • 0.5 cup sour cream
  • 0.25 cup green onions sliced

Equipment

  • Muffin tin

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Cook onion in a skillet until soft, then add garlic.
  3. Add ground beef and cook until browned; drain fat.
  4. Stir in taco seasoning and water, simmer until thick.
  5. Press tortillas into muffin cups to form shells.
  6. Spread beans into each shell.
  7. Fill with taco meat and top with cheese.
  8. Bake 15–18 minutes until golden and melted.
  9. Cool slightly, remove from pan, and add toppings before serving.

Notes

You can substitute ground turkey or plant-based meat for a lighter version.
