Method
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Cook onion in a skillet until soft, then add garlic.
- Add ground beef and cook until browned; drain fat.
- Stir in taco seasoning and water, simmer until thick.
- Press tortillas into muffin cups to form shells.
- Spread beans into each shell.
- Fill with taco meat and top with cheese.
- Bake 15–18 minutes until golden and melted.
- Cool slightly, remove from pan, and add toppings before serving.
Notes
You can substitute ground turkey or plant-based meat for a lighter version.
