Easy Sweet and Sour Chicken

Crispy chicken tossed in tangy homemade sweet and sour sauce.

Ingredients
  

Chicken
  • 2 chicken breasts cubed
  • salt and pepper to taste
Batter
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp baking powder
  • 1 cup cold water
  • 1 egg
Sauce
  • 0.5 cup ketchup
  • 0.33 cup rice vinegar
  • 0.25 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp water for slurry
Stir Fry
  • 1 cup pineapple chunks
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp ginger grated

Equipment

  • Mixing bowls
  • Deep skillet or pot
  • Whisk
  • Tongs

Method
 

  1. Season chicken with salt and pepper.
  2. Whisk batter ingredients until smooth.
  3. Heat oil to 350°F.
  4. Dip chicken in batter and fry until golden.
  5. Simmer sauce ingredients until combined.
  6. Add slurry and cook until thickened.
  7. Sauté garlic, ginger, peppers, and pineapple.
  8. Add chicken and sauce, toss and serve.

Notes

Double fry chicken for extra crispiness.
