Method
- Sift almond flour, powdered sugar, and cocoa powder together into a bowl.
- Beat egg whites until foamy, then add granulated sugar and whip to stiff peaks.
- Fold dry ingredients into meringue until batter flows smoothly.
- Pipe circles onto parchment-lined baking sheets and rest until dry.
- Bake at 300°F (150°C) for 14–16 minutes. Cool completely.
- Beat butter, powdered sugar, cocoa powder, vanilla, and cream into smooth buttercream.
- Sandwich shells with buttercream and decorate as reindeer.
Notes
For best texture, refrigerate assembled macarons for 24 hours before serving.
