Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 medium yellow onion chopped
  • 4 cloves garlic minced
  • 28 oz fire roasted tomatoes canned
  • 3 cups vegetable broth
  • 2 tbsp tomato paste
  • 0.5 cup heavy cream optional
  • 0.25 cup fresh basil chopped
  • 1 tsp salt to taste
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until soft.
  2. Add garlic and cook until fragrant, about 30 seconds.
  3. Stir in tomato paste and cook for 1–2 minutes.
  4. Add fire roasted tomatoes and vegetable broth. Bring to a simmer.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Add basil, salt, and pepper. Blend until smooth.
  7. Stir in cream if using, adjust seasoning, and serve hot.

Notes

For a vegan version, replace cream with coconut milk or olive oil.
