Method
- Heat olive oil in a large pot over medium heat. Add onion and sauté until soft.
- Add garlic and cook until fragrant, about 30 seconds.
- Stir in tomato paste and cook for 1–2 minutes.
- Add fire roasted tomatoes and vegetable broth. Bring to a simmer.
- Simmer for 20 minutes, stirring occasionally.
- Add basil, salt, and pepper. Blend until smooth.
- Stir in cream if using, adjust seasoning, and serve hot.
Notes
For a vegan version, replace cream with coconut milk or olive oil.
