Ingredients
  

Batter
  • 1 can chickpeas 15 oz, drained and rinsed
  • 0.5 cup peanut butter or almond butter
  • 0.33 cup maple syrup
  • 0.25 cup brown sugar
  • 2 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.33 cup oat flour
  • 0.5 cup chocolate chips
  • 2 tbsp milk

Equipment

  • Blender or food processor

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment paper.
  2. Add chickpeas, peanut butter, maple syrup, brown sugar, vanilla, baking soda, salt, oat flour, and milk to blender.
  3. Blend until completely smooth, scraping sides as needed.
  4. Fold in chocolate chips.
  5. Spread batter evenly into prepared pan.
  6. Sprinkle extra chocolate chips on top if desired.
  7. Bake 22–25 minutes until edges are set.
  8. Cool completely before slicing and serving.

Notes

For best texture, chill before slicing. Substitute sunflower butter for nut-free version.
