Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 6 tbsp unsalted butter melted
Cranberry Filling
  • 3 cups cranberries fresh or frozen
  • 0.75 cup granulated sugar
  • 0.5 cup water
  • 1 tbsp lemon juice
Mousse Base
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
Stabilizer
  • 1 tbsp unflavored gelatin
  • 3 tbsp cold water
Whipped Cream
  • 1.5 cups heavy whipping cream
  • 2 tbsp powdered sugar

Method
 

  1. Mix graham cracker crumbs, sugar, and melted butter. Press into a pie dish and chill.
  2. Simmer cranberries, sugar, water, and lemon juice until soft. Blend and strain.
  3. Bloom gelatin in cold water, then melt until liquid.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Mix cranberry purée into cream cheese mixture, then add gelatin.
  6. Whip heavy cream with powdered sugar to soft peaks.
  7. Fold whipped cream into cranberry mixture gently.
  8. Pour into crust and refrigerate until set, about 4 hours.

Notes

Chill thoroughly before slicing for clean edges. Garnish with whipped cream and fresh cranberries.
