Ingredients
  

Burrito Filling
  • 10 large flour tortillas
  • 12 eggs large
  • 1 lb breakfast sausage or bacon cooked
  • 1.5 cups shredded cheddar cheese
  • 1 cup bell peppers diced
  • 0.5 cup onion chopped
  • 1.5 cups cooked breakfast potatoes

Method
 

  1. Cook sausage or bacon in a skillet until fully cooked. Set aside.
  2. Sauté onions and bell peppers in the same skillet until soft. Add potatoes and cook until lightly crisp.
  3. Scramble eggs gently until just set.
  4. Combine eggs, vegetables, meat, and cheese in a large bowl.
  5. Warm tortillas, fill with mixture, and wrap tightly.
  6. Cool completely, wrap individually, and freeze.

Notes

Cool burritos fully before freezing to prevent sogginess.
