- Preheat oven to 375°F (190°C) and lightly grease a casserole dish.
- Heat olive oil and butter in a large skillet over medium heat. Add onions and cook 20–25 minutes until deeply caramelized.
- Stir in garlic, thyme, bay leaf, salt, and pepper; cook 1 minute until fragrant.
- Add chicken pieces and cook 3–4 minutes until lightly browned.
- Stir in orzo, beef broth, and heavy cream. Bring to a gentle simmer.
- Transfer mixture to prepared casserole dish and remove bay leaf.
- Top evenly with Gruyere and mozzarella cheeses.
- Cover loosely with foil and bake 20 minutes. Uncover and bake 10–15 minutes until bubbly and golden.
- Let rest 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
For deeper flavor, take time to fully caramelize the onions. This casserole can be assembled ahead and baked when ready.
