  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 large yellow onions thinly sliced
  • 1 tsp sugar optional
  • 3 cloves garlic minced
  • 1 tsp fresh thyme
  • 0.5 cup white wine
  • 1.5 cups beef broth
  • 1 lb potato gnocchi
  • 1 cup Gruyère cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp Parmesan cheese grated

Method
 

  1. Heat olive oil and butter in a skillet over medium-low heat. Add onions and cook 25–35 minutes until deeply caramelized.
  2. Stir in garlic and thyme; cook 1 minute.
  3. Deglaze pan with white wine and simmer 2–3 minutes.
  4. Add broth, salt, and pepper; simmer 5 minutes.
  5. Stir in gnocchi and cook covered 5–7 minutes until tender.
  6. Top with Gruyère, mozzarella, and Parmesan.
  7. Broil 2–4 minutes until cheese is melted and golden.
  8. Garnish with thyme and serve hot.

Notes

For extra richness, add sautéed mushrooms or a splash of cream.
