- Heat olive oil and butter in a skillet over medium-low heat. Add onions and cook 25–35 minutes until deeply caramelized.
- Stir in garlic and thyme; cook 1 minute.
- Deglaze pan with white wine and simmer 2–3 minutes.
- Add broth, salt, and pepper; simmer 5 minutes.
- Stir in gnocchi and cook covered 5–7 minutes until tender.
- Top with Gruyère, mozzarella, and Parmesan.
- Broil 2–4 minutes until cheese is melted and golden.
- Garnish with thyme and serve hot.
Notes
For extra richness, add sautéed mushrooms or a splash of cream.
