Ingredients
  

Cookie Base
  • 1.5 cups all-purpose flour
  • 0.5 cup cocoa powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp milk
Chocolate Silk Filling
  • 0.75 cup unsalted butter softened
  • 1 cup powdered sugar
  • 6 oz semi-sweet chocolate melted
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
Whipped Topping
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream butter and sugars until fluffy. Add egg, vanilla, and milk.
  4. Mix in dry ingredients until dough forms.
  5. Scoop dough, roll into balls, and press a well in centers.
  6. Bake 9–11 minutes. Cool completely.
  7. Beat butter and powdered sugar, then add melted chocolate, cocoa, and vanilla.
  8. Pipe chocolate filling onto cooled cookies.
  9. Whip cream with sugar and vanilla to stiff peaks.
  10. Top cookies with whipped cream and garnish with chocolate shavings.

Notes

Keep refrigerated due to cream topping.
