Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 2 eggs large
  • 1 cup milk whole milk preferred
  • 1 tsp vanilla extract
Other
  • oil for frying vegetable or canola
  • powdered sugar for dusting

Method
 

  1. Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
  2. Whisk flour, sugar, baking powder, and salt in a bowl.
  3. Whisk eggs, milk, and vanilla in another bowl.
  4. Combine wet and dry ingredients until smooth, without overmixing.
  5. Drop small spoonfuls of batter into hot oil and fry until golden, 1–2 minutes per side.
  6. Remove with a slotted spoon and drain on paper towels.
  7. Dust warm bites generously with powdered sugar and serve.

Notes

For best results, serve immediately. Adjust oil temperature as needed to maintain even frying.
