- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook lasagna noodles according to package instructions if needed.
- Sauté vegetables in olive oil until tender.
- Mix ricotta with seasonings and some cheese.
- Layer sauce, noodles, ricotta, vegetables, and cheese.
- Repeat layers and finish with cheese.
- Cover and bake 30 minutes, uncover and bake 20 minutes more.
- Rest before slicing and serving.
