Ingredients
  

Vegetable Base
  • 1 cup carrots finely chopped
  • 1 cup zucchini finely chopped
  • 1 red bell pepper finely chopped
  • 1 onion small, diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
Creamy Base
  • 4 oz cream cheese softened
  • 2 tbsp Greek yogurt
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion until softened, then add garlic and cook briefly.
  3. Add chopped vegetables and cook until tender.
  4. Cool slightly, then transfer to a food processor.
  5. Add cream cheese, yogurt, lemon juice, and seasonings.
  6. Blend to desired consistency and chill before serving.

Notes

Adjust texture by blending more or less depending on preference.
