Ingredients
  

Pork Loin
  • 3-4 lb pork loin
  • 6 cloves garlic minced
  • 3 tbsp olive oil
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tbsp fresh parsley chopped
  • 1 tbsp lemon zest
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter melted

Method
 

  1. Pat pork loin dry and let rest at room temperature for 20–30 minutes.
  2. Mix garlic, rosemary, thyme, parsley, lemon zest, olive oil, butter, salt, and pepper into a paste.
  3. Rub herb mixture evenly over pork loin.
  4. Place pork on roasting pan with onions or broth if desired.
  5. Roast at 375°F (190°C) for 60–75 minutes or until internal temperature reaches 145°F (63°C).
  6. Rest 10–15 minutes before slicing.

Notes

For extra flavor, baste halfway through cooking.
