Method
- Pat pork loin dry and let rest at room temperature for 20–30 minutes.
- Mix garlic, rosemary, thyme, parsley, lemon zest, olive oil, butter, salt, and pepper into a paste.
- Rub herb mixture evenly over pork loin.
- Place pork on roasting pan with onions or broth if desired.
- Roast at 375°F (190°C) for 60–75 minutes or until internal temperature reaches 145°F (63°C).
- Rest 10–15 minutes before slicing.
Notes
For extra flavor, baste halfway through cooking.
