Ingredients
  

Chicken and Potatoes
  • 1.5 lbs chicken breast cut into chunks
  • 1.5 lbs baby potatoes halved
  • 4 cloves garlic minced
  • 4 tbsp butter melted
  • 2 tbsp olive oil
  • 0.75 cup Parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 2 tbsp parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (205°C). Grease a baking dish or line with foil.
  2. Place chicken and potatoes in the baking dish.
  3. In a bowl, whisk melted butter, olive oil, garlic, Italian seasoning, salt, pepper, and paprika.
  4. Pour mixture over chicken and potatoes, tossing to coat evenly.
  5. Bake uncovered for 40–45 minutes until potatoes are tender and chicken is cooked.
  6. Sprinkle Parmesan over the top and broil 2–3 minutes until golden.
  7. Remove from oven, garnish with parsley, and serve warm.

Notes

For extra crispiness, broil longer but watch closely.
