Ingredients
  

Meatloaf
  • 1 lb ground chicken
  • 3 cloves garlic minced
  • 0.75 cup Parmesan cheese grated
  • 0.75 cup breadcrumbs
  • 0.5 cup milk
  • 2 eggs large
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning

Method
 

  1. Preheat oven to 375°F (190°C) and prepare a loaf pan.
  2. Mix breadcrumbs and milk in a bowl and let absorb.
  3. Add remaining ingredients and gently combine.
  4. Transfer mixture to loaf pan and shape evenly.
  5. Bake for 40–45 minutes until fully cooked.
  6. Rest for 10 minutes before slicing and serving.

Notes

Letting the meatloaf rest helps it stay juicy and slice cleanly.
