Ingredients
  

Soup Base
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 8 cloves garlic minced
  • 2 lbs potatoes peeled and cubed
  • 4 cups broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme
  • 0.5 tsp smoked paprika optional

Equipment

  • Knife

  • Immersion blender

Method
 

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add onion and cook until soft.
  3. Stir in garlic and cook until fragrant.
  4. Add potatoes and broth, then bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Blend soup until smooth.
  7. Stir in cream and seasonings.
  8. Simmer briefly, adjust seasoning, and serve.

Notes

Blend partially for chunky texture or fully for smooth soup.
