  • 1.5 cups diced ripe tomatoes seeds removed
  • 1 cup crushed saltine crackers about 12 crackers
  • 0.5 cup mayonnaise
  • 2 hard-boiled eggs chopped
  • 2 green onions thinly sliced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Combine diced tomatoes, chopped eggs, and green onions in a mixing bowl.
  2. Stir in mayonnaise, salt, and pepper until well mixed.
  3. Crush saltine crackers and fold them in just before serving.
  4. Taste and adjust seasoning if needed, then serve immediately.

Notes

Best served immediately after adding crackers for ideal texture.
