Ingredients
  

Cabbage and Base
  • 1 medium green cabbage thinly sliced
  • 2 tbsp unsalted butter
  • 1 onion sliced
  • 2 garlic cloves minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp caraway seeds optional
  • 1 cup broth vegetable or chicken
Dumplings
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • 0.5 cup milk or water
  • 2 tbsp melted butter

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat butter in skillet. Sauté onion until soft, then add garlic.
  2. Add cabbage, salt, pepper, and caraway seeds. Cook until wilted.
  3. Pour in broth and simmer over low heat.
  4. Mix flour, salt, and baking powder. Whisk eggs, milk, and butter separately, then combine to form soft dough.
  5. Drop spoonfuls of dough onto simmering cabbage.
  6. Cover and steam dumplings for 12–15 minutes without lifting lid.
  7. Serve warm with fresh herbs.

Notes

For richer flavor, sauté 4 oz bacon with onions before adding cabbage.
