German Potato Pancakes

Crispy, golden German potato pancakes made from grated potatoes, onion, eggs, and flour. Perfectly fried and served with applesauce or sour cream.

Ingredients
  

Potato Pancake Batter
  • 6 medium russet potatoes peeled and grated
  • 1 small yellow onion grated
  • 2 eggs large
  • 0.33 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • vegetable oil for frying

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Peel and grate potatoes.
  2. Squeeze out excess moisture using a kitchen towel.
  3. Grate onion and add to potatoes.
  4. Mix eggs, flour, salt, and pepper into the potato mixture.
  5. Heat oil in skillet over medium-high heat.
  6. Drop spoonfuls of batter into the skillet and flatten lightly.
  7. Fry 3–4 minutes per side until golden brown.
  8. Drain on paper towels before serving.

Notes

Best served hot with applesauce or sour cream.
