- Peel and grate potatoes.
- Squeeze out excess moisture using a kitchen towel.
- Grate onion and add to potatoes.
- Mix eggs, flour, salt, and pepper into the potato mixture.
- Heat oil in skillet over medium-high heat.
- Drop spoonfuls of batter into the skillet and flatten lightly.
- Fry 3–4 minutes per side until golden brown.
- Drain on paper towels before serving.

Best served hot with applesauce or sour cream.
