Ingredients
  

Soup Base
  • 2 tbsp sesame oil
  • 1 onion chopped
  • 5 cloves garlic minced
  • 2 tbsp fresh ginger grated
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 6 oz egg noodles
  • 1 tbsp soy sauce
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
Garnish
  • 2 green onions sliced
  • 0.25 cup cilantro chopped
  • 1 tsp chili flakes optional
  • 0.5 lemon juiced

Equipment

  • Large soup pot

Method
 

  1. Heat oil in a large pot over medium heat.
  2. Add onion and cook until translucent.
  3. Stir in garlic and ginger and cook until fragrant.
  4. Add carrots and celery and sauté briefly.
  5. Pour in broth and bring to a gentle boil.
  6. Add chicken, soy sauce, salt, and pepper and simmer 15 minutes.
  7. Add noodles and cook until tender.
  8. Stir in herbs and lemon juice, then serve hot.

Notes

For best texture, cook noodles separately if planning leftovers.
