- Heat oil in a large pot over medium heat.
- Add onion and cook until translucent.
- Stir in garlic and ginger and cook until fragrant.
- Add carrots and celery and sauté briefly.
- Pour in broth and bring to a gentle boil.
- Add chicken, soy sauce, salt, and pepper and simmer 15 minutes.
- Add noodles and cook until tender.
- Stir in herbs and lemon juice, then serve hot.
Notes
For best texture, cook noodles separately if planning leftovers.
