Ingredients
  

Cookie Batter
  • 2.25 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp cloves
  • 0.25 tsp nutmeg
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup molasses
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. Cream butter and brown sugar until light and fluffy.
  4. Mix in molasses, egg, and vanilla extract until smooth.
  5. Gradually add dry ingredients and mix until combined.
  6. Roll dough into balls and coat generously in powdered sugar.
  7. Bake 10–12 minutes until cookies crack and set.
  8. Cool slightly before transferring to wire rack.

Notes

Do not overbake for soft centers.
