- Cook white rice according to package instructions and allow to cool completely.
- In a large bowl, combine cooled rice and sugar, mixing gently.
- Fold in drained crushed pineapple until evenly distributed.
- Add mini marshmallows and stir gently.
- Fold in whipped cream until light and fluffy.
- Stir in shredded coconut, reserving some for garnish if desired.
- Cover and refrigerate for at least 1 hour before serving.
Notes
For best texture, ensure rice is fully cooled and pineapple is well drained.
