Ingredients
  

  • 2 cups cooked white rice cooled
  • 1 cup crushed pineapple well drained
  • 0.5 cup granulated sugar
  • 1.5 cups whipped cream
  • 1.5 cups mini marshmallows
  • 0.5 cup shredded coconut

Method
 

  1. Cook white rice according to package instructions and allow to cool completely.
  2. In a large bowl, combine cooled rice and sugar, mixing gently.
  3. Fold in drained crushed pineapple until evenly distributed.
  4. Add mini marshmallows and stir gently.
  5. Fold in whipped cream until light and fluffy.
  6. Stir in shredded coconut, reserving some for garnish if desired.
  7. Cover and refrigerate for at least 1 hour before serving.

Notes

For best texture, ensure rice is fully cooled and pineapple is well drained.
