Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 1 tsp ground turmeric
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 4 cups vegetable broth
  • 2 cups white beans cooked
  • 3 cups kale chopped
  • 1 tbsp lemon juice fresh

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and spices, cooking until fragrant.
  3. Pour in vegetable broth and bring to a simmer.
  4. Add white beans and cook for 10 minutes.
  5. Stir in kale and cook until tender.
  6. Season with salt, pepper, and lemon juice before serving.

Notes

Blend a portion of the soup for a creamier texture if desired.
