- Place popcorn in a large bowl, removing any unpopped kernels.
- In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt until bubbling.
- Simmer caramel mixture for 2–3 minutes, stirring frequently.
- Remove from heat and stir in vanilla extract and marshmallows until completely melted and smooth.
- Pour caramel marshmallow mixture over popcorn and toss gently to coat evenly.
- Allow to cool slightly and serve while still gooey.
Notes
Best served warm for maximum gooey texture. Reheat briefly in the microwave if needed.
