Ingredients
  

Popcorn Base
  • 10 cups popped popcorn plain or lightly salted
Caramel Marshmallow Coating
  • 0.5 cup unsalted butter
  • 1 cup brown sugar packed
  • 0.25 cup light corn syrup
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows

Method
 

  1. Place popcorn in a large bowl, removing any unpopped kernels.
  2. In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt until bubbling.
  3. Simmer caramel mixture for 2–3 minutes, stirring frequently.
  4. Remove from heat and stir in vanilla extract and marshmallows until completely melted and smooth.
  5. Pour caramel marshmallow mixture over popcorn and toss gently to coat evenly.
  6. Allow to cool slightly and serve while still gooey.

Notes

Best served warm for maximum gooey texture. Reheat briefly in the microwave if needed.
