Gooey Tres Leches Cinnamon Rolls

Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 1 cup warm milk
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp salt
Filling
  • 0.75 cup brown sugar packed
  • 2 tbsp ground cinnamon
  • 0.33 cup unsalted butter softened
Tres Leches Soak
  • 0.5 cup evaporated milk
  • 0.5 cup sweetened condensed milk
  • 0.5 cup heavy cream
Glaze
  • 4 oz cream cheese softened
  • 0.25 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp milk for consistency

Equipment

Method
 

  1. Combine warm milk, sugar, and yeast. Let sit until foamy.
  2. Mix in butter, eggs, and salt. Gradually add flour until soft dough forms.
  3. Knead dough until smooth and elastic.
  4. Cover and let rise until doubled in size.
  5. Roll dough into rectangle, spread butter, sprinkle cinnamon sugar.
  6. Roll into log, slice into rolls, place in baking dish, and let rise again.
  7. Bake at 350°F until lightly golden.
  8. Whisk tres leches mixture and pour over warm rolls.
  9. Beat glaze ingredients until smooth and drizzle over rolls.

Notes

Pour milk mixture slowly for best absorption and softest texture.
