Ingredients
  

Greek Chicken
  • 1.5 lb boneless skinless chicken
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1.5 tsp dried oregano
  • 1 tsp paprika
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Bowls
  • 3 cups cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion sliced
  • 0.5 cup Kalamata olives sliced
  • 0.5 cup feta cheese crumbled
  • 0.75 cup tzatziki sauce

Equipment

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Marinate chicken for at least 30 minutes.
  2. Cook chicken on a grill pan or skillet over medium-high heat until cooked through. Rest and slice.
  3. Prepare rice according to package instructions.
  4. Chop vegetables and prepare toppings.
  5. Assemble bowls with rice, chicken, vegetables, feta, and tzatziki.
