Ingredients
  

Chicken
  • 1.5 lb boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tsp dried oregano
Bowls
  • 3 cups cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup feta cheese crumbled

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken for at least 30 minutes.
  2. Cook chicken in a skillet or grill pan over medium-high heat until cooked through. Rest and slice.
  3. Prepare rice according to package instructions.
  4. Assemble bowls with rice, chicken, vegetables, feta, and tzatziki.
