- Preheat oven to 400°F (200°C). Cut top off garlic bulb, drizzle with olive oil, wrap in foil and roast 35–40 minutes until soft.
- Squeeze roasted garlic into a bowl and mash into a paste.
- Heat 1 tablespoon olive oil in a skillet, sauté spinach until wilted, season lightly, and set aside.
- Mix roasted garlic with ricotta, lemon zest, oregano, salt, and pepper to form white garlic base.
- Increase oven to 475°F (245°C). Stretch dough into a round and place on parchment paper.
- Brush dough with remaining olive oil, spread garlic ricotta mixture, then top with mozzarella, spinach, onion, and feta.
- Bake 10–14 minutes until crust is golden and cheese is bubbly.
- Garnish with fresh herbs, slice, and serve hot.
Notes
Add olives or grilled chicken for variation. Best served immediately while crust is crisp.
