Ingredients
  

Pizza Base
  • 1 lb pizza dough store-bought or homemade
Toppings
  • 1 head garlic roasted
  • 3 tbsp olive oil divided
  • 2 cups baby spinach fresh
  • 0.5 cup ricotta cheese
  • 1.5 cups mozzarella cheese shredded
  • 0.75 cup feta cheese crumbled
  • 0.25 red onion thinly sliced
  • 0.5 lemon zested
  • 1 tsp dried oregano
  • 0.25 tsp red pepper flakes optional
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Cut top off garlic bulb, drizzle with olive oil, wrap in foil and roast 35–40 minutes until soft.
  2. Squeeze roasted garlic into a bowl and mash into a paste.
  3. Heat 1 tablespoon olive oil in a skillet, sauté spinach until wilted, season lightly, and set aside.
  4. Mix roasted garlic with ricotta, lemon zest, oregano, salt, and pepper to form white garlic base.
  5. Increase oven to 475°F (245°C). Stretch dough into a round and place on parchment paper.
  6. Brush dough with remaining olive oil, spread garlic ricotta mixture, then top with mozzarella, spinach, onion, and feta.
  7. Bake 10–14 minutes until crust is golden and cheese is bubbly.
  8. Garnish with fresh herbs, slice, and serve hot.

Notes

Add olives or grilled chicken for variation. Best served immediately while crust is crisp.
