Ingredients
  

Potato Cake Mixture
  • 3 cups mashed potatoes chilled
  • 1 cup shredded cheddar cheese
  • 0.5 cup roasted green chiles chopped
  • 1 egg large
  • 0.5 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 3 tbsp oil for frying

Method
 

  1. Combine mashed potatoes, cheese, green chiles, egg, flour, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Mix until a firm dough forms; add flour as needed.
  3. Shape mixture into 8 round patties.
  4. Heat oil in a skillet over medium heat.
  5. Cook potato cakes for 3–4 minutes per side until golden and crispy.
  6. Transfer to a wire rack or paper towels to remove excess oil.
  7. Serve hot with your favorite dipping sauces.

Notes

Use cold mashed potatoes for best results; pepper jack cheese adds a great spicy kick.
