Ingredients
  

  • 20 oz cheese tortellini cooked and cooled
  • 1 cup salami sliced
  • 1 cup ham sliced
  • 1 cup provolone cheese cubed
  • 1.5 cups romaine lettuce shredded
  • 1 cup cherry tomatoes halved
  • 0.5 cup pepperoncini peppers sliced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup mayonnaise
  • 0.25 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Italian seasoning

Equipment

  • Large pot
  • Colander
  • Mixing bowls
  • Whisk

Method
 

  1. Cook tortellini according to package instructions. Drain and cool.
  2. Combine tortellini with meats, cheese, vegetables in a large bowl.
  3. Whisk dressing ingredients until smooth.
  4. Toss salad with dressing until evenly coated.
  5. Fold in lettuce just before serving and adjust seasoning.

Notes

Add lettuce just before serving to keep it crisp.
