Egg Cups
  • 8 eggs large
  • 1 cup diced ham cooked
  • 1 cup cheddar cheese shredded
  • 0.25 cup milk
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 2 tbsp chives chopped, optional

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk eggs and milk together until smooth.
  3. Add salt, pepper, and garlic powder and mix well.
  4. Divide diced ham evenly among muffin cups.
  5. Sprinkle cheese over ham.
  6. Pour egg mixture into each cup until three-quarters full.
  7. Bake 18–22 minutes until eggs are set.
  8. Cool slightly, remove from pan, garnish with chives, and serve.

Notes

Store refrigerated up to 4 days or freeze up to 2 months. Reheat in microwave before serving.
