Ingredients
  

Teriyaki Marinade
  • 2 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice
  • 0.5 cup low sodium soy sauce
  • 0.33 cup brown sugar
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
Sauce & Garnish
  • 1 cup pineapple chunks
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame seeds
  • 2 green onions, sliced

Equipment

Method
 

  1. Whisk pineapple juice, soy sauce, brown sugar, honey, garlic, ginger, vinegar, and sesame oil to make marinade.
  2. Marinate chicken for at least 30 minutes or up to 4 hours.
  3. Cook chicken on grill or skillet for 5–7 minutes per side.
  4. Simmer reserved marinade, add cornstarch slurry, and thicken into teriyaki glaze.
  5. Stir in pineapple chunks and simmer 2 more minutes.
  6. Slice cooked chicken, pour glaze over the top, and garnish with sesame seeds and green onions.

Notes

Perfect for grilling, meal prep, or serving with rice. Add spice with red pepper flakes or sriracha.
