- Heat oil in a large pot and gently sauté ginger until fragrant.
- Add garlic and scallions and cook briefly.

- Simmer 10–15 minutes to infuse flavors.
- Add noodles and cook until tender.
- Stir in leafy greens and cook until wilted.
- Adjust seasoning and serve hot with garnishes.
