Ingredients
  

Soup Base
  • 6 cups vegetable or chicken broth
  • 2 tbsp fresh ginger thinly sliced
  • 3 cloves garlic minced
  • 2 scallions sliced
  • 1 cup carrots julienned
  • 1 cup mushrooms sliced
  • 4 oz noodles rice or wheat
  • 2 cups leafy greens spinach or bok choy
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Equipment

  • Large soup pot
  • Cutting board
  • Chef’s knife
  • Ladle

Method
 

  1. Heat oil in a large pot and gently sauté ginger until fragrant.
  2. Add garlic and scallions and cook briefly.
  3. Stir in carrots and mushrooms and cook until slightly softened.
  4. Pour in broth, soy sauce, and sesame oil and bring to a simmer.
  5. Simmer 10–15 minutes to infuse flavors.
  6. Add noodles and cook until tender.
  7. Stir in leafy greens and cook until wilted.
  8. Adjust seasoning and serve hot with garnishes.

Notes

Adjust ginger and seasoning to taste. Add protein if desired.
