Ingredients
  

Coconut Filling
  • 2 cups unsweetened shredded coconut
  • 0.5 cup almond butter
  • 0.33 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Topping
  • 12 whole almonds
Chocolate Coating
  • 1.5 cups dark chocolate chips
  • 1 tsp coconut oil optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Parchment paper
  • Microwave-safe bowl

Method
 

  1. Mix shredded coconut, almond butter, honey or maple syrup, vanilla, and salt until combined.
  2. Shape mixture into small bars or ovals and place on parchment-lined tray.
  3. Press one almond into each piece.
  4. Freeze 20–30 minutes until firm.
  5. Melt chocolate chips and coconut oil in microwave, stirring until smooth.
  6. Dip each coconut piece into melted chocolate and place back on tray.
  7. Refrigerate until chocolate hardens.
  8. Serve or store in airtight container.

Notes

Keep chilled for best texture. Substitute maple syrup for vegan option.
