Method
- Mix shredded coconut, almond butter, honey or maple syrup, vanilla, and salt until combined.
- Shape mixture into small bars or ovals and place on parchment-lined tray.
- Press one almond into each piece.
- Freeze 20–30 minutes until firm.
- Melt chocolate chips and coconut oil in microwave, stirring until smooth.
- Dip each coconut piece into melted chocolate and place back on tray.
- Refrigerate until chocolate hardens.
- Serve or store in airtight container.
Notes
Keep chilled for best texture. Substitute maple syrup for vegan option.
