Ingredients
  

Salad
  • 2 cups chickpeas drained and rinsed
  • 2 avocados diced
  • 1 cup cucumber diced
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh parsley chopped
Dressing
  • 2 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 tsp ground cumin

Equipment

Method
 

  1. Drain, rinse, and dry the chickpeas thoroughly.
  2. Dice avocado, cucumber, tomatoes, onion, and parsley.
  3. Whisk olive oil, lime juice, salt, pepper, and cumin in a small bowl.
  4. Combine chickpeas and chopped vegetables in a large bowl.
  5. Pour dressing over salad and gently toss.
  6. Taste and adjust seasoning as desired.
  7. Serve immediately or chill briefly before serving.

Notes

Add dressing just before serving for best freshness. Store leftovers up to 24 hours.
