Ingredients
  

Cookie Batter
  • 2 ripe bananas mashed
  • 1.5 cups rolled oats
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 tsp baking powder
  • 2 tbsp chia seeds
  • 0.33 cup raisins
  • 0.25 cup dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash bananas in a large bowl until smooth.
  3. Mix in almond butter, honey, egg, and vanilla extract until combined.
  4. Stir in oats, cinnamon, salt, baking powder, and chia seeds.
  5. Fold in raisins and chocolate chips.
  6. Scoop dough onto baking sheet and flatten slightly.
  7. Bake for 12–15 minutes until set and lightly golden.
  8. Cool on a wire rack before serving or storing.
